Huevos Pericos (Colombian Scrambled Eggs)

This Colombian basic breakfast dish generally known as Huevos Pericos made with eggs, scallions and tomatoes is one among my favourite methods to arrange eggs.

Ingredients:

  • 2 teaspoons olive oil
  • 3 to 4 medium scallions, white and inexperienced elements, sliced skinny
