I tailored this dish from this recipe I discovered on-line, which I lightened up just by decreasing the butter, oil, Parmesan and cream cheese. Fish Florentine

This simple Fish Florentine recipe, made with a pan seared firm white fish served on a creamy mattress of spinach seems like one thing you’d order out in a flowery restaurant!

Ingredients:

  • 4 (5 oz) thick items of skinless white firm fish fillet (comparable to grouper, bass or halibut)
  • 1 tablespoons further virgin olive oil
  • 1 tablespoon salted butter
  • 1 cup crimson bell pepper chopped
  • 2 cloves garlic minced
  • 9 ounces recent baby spinach (from two luggage)
