Ingredients

  • 2 cups chopped carrots
  • 3/4 cup walnuts
  • 15 dates
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp ginger
  • 1/8 tsp nutmeg
  • 1/4 tsp salt
  • 1/4 cup almond flour add extra if wanted
  • 3 tbsp coconut flour
  • 2 tbsp shredded coconut for coating

Instructions

  1. Chop the carrots into 2 inch items. Add to a baking dish, cowl with parchment and bake for at 400 deg F (200 C) for 20 minutes. (You can skip this step and use uncooked carrot, you’ll need a couple of tbsp extra almond flour later).

  2. Add walnuts to a food processor and pulse to cut into a fair coarse combination

  3. Add the roasted carrots, dates, vanilla, spices and salt and course of till the combination is properly mixed and doughy.
