Don't miss our 15 delicious smoothies to help you lose weight

I deliberate on baking my Apple Pie Blondies (concept courtesy of commenter miss Karin!) so I may cross it off my “Blondie Flavors To-Bake List” however fully forgot to purchase the apples (doh).  I used to be at house with barely any substances readily available, after which I remembered I had saved a weblog submit wayyyy again when with a fairly intriguing recipe:  Quinoa Bread.  The weblog is unfortunately not lively, however the recipe used 100% quinoa flour moderately than a mix of flours and required only a few substances.  Now this was a recipe I may make with so few substances readily available!  Here are the recipe changes I made:

  • omitted the seeds and raisins
  • changed buttermilk with a combination of dairy-free coconut yogurt and coconut milk
  • added stevia extract for sweetness
  • baked the batter in a cupcake tin as a substitute of a loaf pan

I used to be planning on the recipe to make muffins, however the texture ended up being far more like cake than a muffin.  And that’s a win in my view  😉

I made a number of extra recipe modifications for the subsequent trial and BAM, I bought the perfect cupcakes on this planet!

Okay, that could be a controversial assertion, particularly in my family.  My mom, sister, and I beloved these cupcakes, however my father was undecided as he may detect the quinoa flour.  Straight out of the bundle, quinoa flour has a fairly sturdy grassy scent.  After baking, it has considerably of a bitter taste, however so long as you counteract it with a sweetener of some type (my favourite is stevia) and one other taste akin to chocolate or peanut butter, you have to be good!  That’s why I selected to frost the cupcakes with chocolate frosting.  The frosting overpowers the bitterness of the quinoa flour.

My dad mentioned that he would undoubtedly attain for an additional cupcake, but when it was served with out the frosting, he in all probability wouldn’t seize a second serving.

Without frosting, these are extra like muffins.  Super fluffy, mildly candy…  and clearly made the perfect they are often when topped with frosting  😉
